Lemon And Garlic Soup

(Prep + Cook Time: 20 minutes | Servings: 4)

6 cups shellfish stock  
1 tbsp. garlic; finely minced  
1 tbsp. coconut oil; melted  
2 eggs  
1/2 cup lemon juice  
A pinch of sea salt  
White pepper to the taste  
1 tbsp. arrowroot powder  
Cilantro; finely chopped for serving

1- Heat up а pot with the oil over medium high heat, add garlic, stir and cook for 2 minutes.  2- Add stock but reserve 1/2 cup, stir and bring to а simmer.
3- Meanwhile; in а bowl, mix eggs with sea salt, pepper, reserved stock, lemon juice and arrowroot and whisk very well.  
4- Pour this into soup, stir and cook for а few minutes. Ladle into bowls and serve with chopped cilantro on top.
