Italian Style Eggs

(Prep + Cook Time: 25 minutes | Servings: 1)

2 eggs  
1/4 tsp. rosemary; dried  
1/2 cup cherry tomatoes halved  
1½ cups kale; chopped  
1/2 tsp. coconut oil  
3 tbsp. water  
1 tsp. balsamic vinegar  
1/4 avocado; peeled and chopped  

1- Heat up а pan with the oil over medium high heat, add water, kale, rosemary and tomatoes, stir; cover and cook for 4 minutes.  
2- Uncover pan, stir again and add eggs.  
3- Stir and scramble eggs for 3 minutes.  
4- Add vinegar, stir everything and transfer to а serving plate. Top with chopped avocado and serve.
